Whole milk powder is a dry milk product made of whole milk. After all water is removed from the milk, the powder can be used in a large number of industrially produced foodstuffs, such as chocolate, baby food, yoghurt, cheese, pastry or ice cream. Whole milk powder is also found in finished products such as soups, sauces, meat products and desserts. Adding water to whole milk powder turns it back into milk.

Skimmed milk powder is dry milk powder obtained from skimmed milk. Water is extracted from the milk entirely. The resulting powder can be turned back into drinkable milk by adding water to it. Skimmed milk powder is used as a milk dry mass, e.g. in the baking and confectionery industries, but also in the production of finished and meat products, such as bread, chocolate, sausages, sauces and soups. But skimmed milk powder is also used in yoghurt, ice cream and baby foods and can be a milk substitute, e.g. as a coffee whitener.
Whey powder is obtained from whey and sold as a dry product. Its high protein content makes it particularly interesting for foods with a high protein requirement, e.g. in shakes consumed after exercise to build muscles and regenerate. It is also found in refreshing drinks. Whey powder also is an ingredient in bakery products and finished products, as well as in the production of whey cheese like ricotta. Depending on the production process, sweet whey powder is distinguished from sour whey powder.
Milk protein is about 80% caseins and 20% whey proteins. Caseins are obtained mainly from dairy products such as cheese. As a protein component, casein is essential in cheese production. It coagulates once lactic acid bacteria or rennet enzymes are added, giving cheese its firm consistency. The long-term effect of casein is particularly interesting for muscle building and maintenance. It is often used as a dietary supplement, e.g. in protein shakes for this effect and can supply the body with protein over a period of six to eight hours.

Lactose is sugar from the milk of mammals. It is obtained from whey during cheese production. The food industry has various uses for milk sugar: It makes foods creamier and adds a beautiful brown shade when heated, is suitable as a filling agent or carrier, used as a base product in the production of lactic acid and can be processed into glucose/galactose syrup.
